Actually, I don't know if it's possible to change color depths on the fly...

However, xf86config allows you to specify multiple resolutions on multiple
color depths for your XF86Config, so it might be.  Try setting up your 
XF86Config
this way, and then use the normal resolution switching method (Ctrl&Alt&+/-).

That might do the trick - if it doesn't, then you'll just have to quit X and 
restart it
with a different color depth.
