Did I miss something here ? Why don't you just yank the monitor
cable from one of the two other machines and plug it in while
you install ? It's not like you need to shutdown for something
like that.

And if I did miss something here, just borrow someone else's
monitor. It'd be tons easier than trying to deal with making a
custom bootdisk with a getty running on ttyS0, with which you
could login from remotely and run the 'setup's script or
whatnot.
