I think its mostly through the bookstore. http://www.computerstore.umn.edu/
A quick search of the software list shows a few Linux distros.  Never
bought any software there myself, but that might change if they 
stocked Loki titles ;). Of course it doesn't look like they stock games.

And I have no idea who to contact - though there is an order "email"
address on the webpage.
