I've heard of these kinds of people, but I'm confused. What kind of
arguments do they give? What grounds do they stand on when they say Unix
isn't good enough or whatever? How do they justify the MS lock-in
tactics and the 'one server machine per service process' conventinal NT
wisdom?

I'm just baffled.
