E-mail Q....

Greetings all.

I'm working on setting up email retrieval on my Linux box, and I'm 
wondering if anyone can tell me how to determine what mail protocol(s) to 
use.  Does anyone have a procedure for setting up email in Linux they could 
pass along?  As always, any thoughts, suggestions, or incantations will be 
appreciated.
